Blueberry Oat Pancakes (Gluten-free)

These blueberry oat pancakes are a delicious and healthy breakfast idea for babies, older kids, and parents. They are gluten-free and have no added sugar, making them suitable for babies from 6 months old. They take less than 30 minutes to prepare, making them great for busy mornings and parents who are multitasking.

Pancakes or waffles are one of those breakfasts that we have at least once a week in my family. It's a big hit with the baby and my preschooler, and well... we also love them too!

My kids love all types of berries, and I always make sure I have some berry fruits in the fridge for breakfast and lunchboxes. When I came up with these blueberry oat pancakes, I was simply trying to combine two of our favorite breakfast foods, blueberries and pancakes. At the same time, I wanted a healthy pancake version without any sugar added, so the baby could have them too. I must admit that we devoured them, so I had to share them with you!

🥘 Ingredients

To make these healthy blueberry pancakes, we will need some oats, milk, egg, blueberries, banana and baking powder.

I like to use old-fashioned or quick oats without any added flavors or sugar in them. I haven't tried using steel-cut oats for these blueberry oat pancakes, so if you do, please write me a comment down below and let me know if it worked for you.

🔪 Step-by-step Instructions

So get your ingredients ready and let's get started!

01. To start, I'm adding the oats to a food processor. I mix them for a few seconds, just enough to get a bit finer. Then, I add them to a big bowl.

02. Ι add the banana and the egg to the food processor and mix them until they get nice and creamy. And we are done with the food processor!

03. In the bowl with the oats, I add the banana and eggs mixture, the baking powder and milk. I mix everything with a spatula, just enough to combine the ingredients.

04. I give the blueberries a good wash and then cut them in half. Alternatively, you could press them with a fork a little bit just to break their shape and get some of the juices out. I add the blueberries to the bowl and lightly mix them with the batter.

Step3: Adding milk with the rest of the ingredients to a bowl. Step4: Cutting blueberries in half and adding them to the bowl.

05. I place a non-stick frying pan over medium heat and add a little bit of butter or coconut oil. Then I spoon about a quarter cup of the batter to the pan, making a circle shape.

06. I leave it on for 2-3 minutes until I start seeing bubbles coming out, and then I flip over to cook on the other side. I continue until all the batter is gone. The recipe yields about 6 medium-sized pancakes.

📖 Substitutions & Variations

  • Instead of blueberries, you could also use raspberries or blackberries.
  • Instead of butter, you could use some coconut oil before adding the batter to the pan.
  • For some extra goodness, you could add a tablespoon of chia seeds to the batter.

🍽 Serving suggestions

These healthy blueberry oat pancakes are great for breakfast for the baby, toddlers and whole family really. You could also offer them as a snack as they are fairly quick to prepare, or even pack a couple and take them with you when you go to the playground or for shopping.

Babies (6-12 months): For babies under 12 months, I would avoid adding any sugary toppings and just offer them plain, cut into strips or squares. If you are offering these blueberry oat pancakes for breakfast, you could add some Greek yogurt on the side and some fruits or add a little bit of your favorite nut butter on the pancake or some scrambled egg for some extra protein.

All other ages: For all other ages, you could drizzle some honey or maple syrup on top, spread some nut butter, or some jam.

🧰 Storage

We usually devour these blueberry oat pancakes, so we rarely have any leftovers to worry about! But if you are thinking of making a double batch or simply making these just for your little one, then you could store any leftovers in the fridge for up to 3 days. Warm them up in the pan or the microwave for a minute before serving.

They could also go in the freezer and keep for up to 2 months. For convenience, I would put some parchment paper between each pancake, so it's easier to separate when taken out of the freezer. When you are ready to have them, take them out of the freezer and warm them up in the microwave for a couple of minutes or in a pan. Always check how hot they are before serving your baby.

💭 Tips

  • Use a food processor to break down the oats and get a better texture.
  • Use a ripe banana for more flavor and sweetness.

❓ FAQ

How do you cut pancakes for babies?

For a baby between 6-8 months old, cut the pancakes into strips so he can hold them with his fist and bring them to his mouth. For babies 9-12 months, you could offer the pancakes in strips or squares as they have developed the pincer grasp and can hold smaller bits of food.

What can I spread on a pancake for my baby?

You could offer the pancakes plain, cut into the appropriate size for your baby or spread some cream cheese on top or a nut butter like peanut butter or almond butter.

Ingredients
  

  • 1 cup oats (quick oats or old-fashioned)
  • 1 banana
  • 1 egg
  • 1 ½ teaspoons baking powder
  • ¼ cup milk
  • ½ cup blueberries
  • butter or coconut oil (for the pan)

Instructions
 

  • Add the oats in a blender. Blend until grounded.
  • Add the banana and egg to the blender. Blend until creamy.
  • Add the oatmeal, banana, egg, milk and baking powder to a bowl. Lightly mix with a spatula.
  • Cut the blueberries in half and incorporate into the batter.
  • Warm up a pan and add a bit of butter. Add ¼ cup of the batter.
  • Cook for 2-3 minutes, then flip to cook on the other side.
  • Continue until all the batter is gone.
