Instructions
Wash and add the cauliflower to a food processor. Blend until it resembles coarse breadcrumbs.
Add the boneless chicken, onion powder, garlic powder, ground pepper, dried herbs and salt to the food processor. Blend until it's all combined.
Transfer the mixture to a bowl. In another bowl, add the egg and beat lightly. In a third bowl, place the breadcrumbs.
Take some of the mixture and shape it into a nugget. Cover with the egg and then breadcrumbs.
Brush a baking tray with a tablespoon of oil and place each nugget as you make it. Brush or spray the nuggets with some oil for a crispier nugget.
Bake in a preheated oven to 400℉ / 200℃ for 20–25 minutes, or until golden brown.
