Instructions
Thaw the puff pastry according to package instructions and keep it in the fridge while you prepare the apple filling.
Peel and cut the apples into cubes. Place in a bowl with the lemon juice.
Heat a pan over medium heat. Add the butter.
When the butter has melted, add the chopped apples. Cook until the juices have evaporated, for about 10–12 minutes.
Turn off the heat and add the honey and ground cinnamon. Mix with the spatula.
Add the raisins and set aside to cool down.
Take the puff pastry out of the fridge and remove any packaging. Lightly dust the surface with some flour.
Place the puff pastry flat and cut into four squares or rectangles.
Add some of the filling in the middle of each piece, leaving about a finger space on each side of the square.
With a brush or your index finger, rub some water around the edges. Fold the corners inside and then each side, forming a little barrier.
Bake in a preheated oven to 400℉ / 200℃ for 20-25 minutes or until golden brown.

Notes
Instead of honey, you could use maple syrup or just leave it out.
Use could optionally add some raisins or chopped walnuts to the filling.
