Instructions
Add the cooked lentils and eggs to a blender. Blend until combined and you have a runny mixture. Empty the mixture to a bowl.
Add the maple syrup, milk, oil and applesauce to the bowl. Whisk until all combined.
Add the flour, baking soda and baking powder. Mix until you have a lightly thick batter.
Set a handful of the chocolate chips aside and add the rest to the batter. Lightly mix to combine.
Add the batter to the muffin cases. Add the remaining chocolate chips on top of each lentil muffin.
Bake for 20-25 minutes in a preheated oven to 350℉ / 180℃.
Notes
To get 1 cup of cooked red lentils, you need to add about half a cup in boiling hot water. Cook for 5-10 minutes until soft.
These lentil muffins are freezable for up to 3 months.
