These orange and mango popsicles are the perfect treat for a hot summer day. Made without any refined white sugar, they’re naturally sweetened with fruit and just a touch of maple syrup. A refreshing, fruity treat that the whole family can enjoy!
In a food processor add the frozen mango, orange juice and quarter cup of maple syrup. Blend until thick and creamy.
Add the orange and mango mixture to the popsicle molds leaving about a finger space for the strawberry syrup. Place the molds in the freezer for an hour without the sticks.
In a pan, add the frozen strawberries cut in half and a tablespoon of maple syrup.
Cook in medium heat for 4-5 minutes until the strawberries get soft and release their juices.
Place the cooked strawberries in a sieve with a bowl under. Press with the back of a spoon or a spatula to release all the strawberry juices. Scrape the underside of the sieve to collect any remaining syrup. Let it cool down while the popsicles are in the freezer for an hour.
After an hour, take the molds out of the freezer and add the strawberry syrup on top with a spoon. Using a stick gently mix the strawberry syrup with the lightly frozen popsicle to create the sunrise effect.
Place the popsicle sticks in the molds and freeze for 2-3 more hours or until they are completely set.
Notes
You could use fresh or frozen mango cubes.
You could skip the strawberry syrup for an easier and simpler version.
