Instructions
In a blender, add the milk and cooked beet cut into quarters. Blend until smooth and no large bits left.
In a bowl, add the eggs. Break down using a whisk. Add the vanilla, maple syrup and beet mixture. Mix to combine.
Add the flour, baking powder and baking soda. Whisk until incorporated and you have a thick batter.
Warm up your waffle maker and add some grease if needed. Add about a quarter cup of the batter for each waffle and cook until crispy on the outside.
