But once cooked, their natural sweetness really comes through, similar to other root vegetables like carrots and sweet potatoes. By combining them with a few pantry staples like flour, milk, and eggs, you can turn them into delicious beet waffles that the whole family will enjoy.

🥘 Ingredients
To make these delicious beet waffles, we are going to use beets, milk, eggs, vanilla paste or extract, maple syrup (optional), unsalted butter, all-purpose flour, baking powder and baking soda.
- Beets: I’m using a medium-sized beet that I’ve boiled until tender. You can also roast it, but I find boiling quicker.
- Vanilla: I like to use a teaspoon of vanilla paste to add a lovely aroma and help balance the earthy flavor of the beets.
- Maple syrup: This is optional and can be substituted with honey (NOT for babies under 12 months).

🔪 Step-by-step Instructions
So get your ingredients ready and let's get started!
01. I add the milk and the cooked beet, cut into quarters, to a blender (or use an immersion blender) and blend until there are no large pieces left.
02. In a bowl, I add the eggs and whisk them until combined. Then I add the vanilla paste and melted butter.

03. I add the beet mixture and then the flour, baking powder and baking soda. I lightly whisk until all incorporated and the batter for these beet waffles is ready.
04. I use a Dash mini waffle maker with interchangeable plates. It does take a bit more time than a regular waffle maker, but I like that it doesn’t take up much space in the cupboard, and I can make fun shapes that the kids love.
Once the plates are hot, I add about ¼ cup of batter for each waffle. We like our waffles crispy on the outside, so they take about 6 minutes to cook.

You could serve these beet waffles for breakfast alongside some fresh fruits and some yogurt for protein.

🧰 Storage
If you have any leftover beet waffles, store them in an airtight container or a bread bin for 1–2 days. You can reheat them in a pan for a minute or pop them in the toaster for a few seconds to crisp them up again.
They also freeze well. I like to place a piece of parchment paper between each waffle and stack them, so it’s easy to take out one or two on busy days.

Yes you could use the same amount of whole wheat flour. If the batter turns out too thick, add 1-2 tablespoons of milk.
