Broccoli Omelette

An easy and quick broccoli omelette, made with just a few simple ingredients. Great for breakfast or as a meal with some salad on the side or baked veggies. Enjoy!

Instructions
Peel and chop half an onion. Wash the broccoli florets and slice into smaller bits.
Add 2 tablespoons of olive oil to a heated pan. Add the chopped onion and broccoli. Cook for 4–5 minutes in medium-low heat.
Add the cooked onion and broccoli to a bowl and set aside.
In a bowl, add the eggs and lightly beat with a fork or whisk.
Add one tablespoon of olive oil to a heated pan over medium heat. Add the eggs and the ground pepper.
Add the cooked onion and broccoli on top of the eggs. Add the shredded cheese on top.
Cover the pan with a lid and cook for 3–4 minutes. Uncover and flip over the omelette with a plate or using the pan handle.
Cook the omelette uncovered for 2-3 more minutes and serve.

Notes
You could use olive oil or butter for the pan.
Store any leftover omelette in the fridge and consume within 1-2 days.
