This broccoli omelette is great for breakfast or lunch and it's full of protein, fiber and vitamin C. It's good for babies that follow the BLW method, toddlers and adults.

Eggs are a favorite in our house because they're a great source of protein and iron. I often pair them with greens or vitamin C-rich fruits to enhance nutrient absorption.

With just 6 ingredients, you can whip up this broccoli omelette in under 30 minutes. It's perfect for busy mornings when you need something quick to fill your little one's hungry tummy, and you can enjoy it too!

If served for lunch, then you could add some healthy potato wedges or some zucchini fries on the side for a full meal.

🥘 Ingredients

To make this easy and quick broccoli omelette, we are going to use eggs, broccoli florets, cheese, onion, olive oil or butter and optionally some ground pepper. For toddlers, older kids and adults, you could add some salt to taste.

🔪 Step-by-step Instructions

So get your ingredients ready and let's get started!

01. I chop the onion and set it aside. Then I add the broccoli florets to a bowl filled with water and a tablespoon of vinegar and leave it for a few minutes.

02. I drain the broccoli florets and then chop them with a knife. We are not going to steam or boil the broccoli, so cutting it into smaller bits helps to cook faster.

03. In a wide pan, I add a couple tablespoons of olive oil, the chopped onion and broccoli florets and cook in medium-low heat for 4–5 minutes. Just enough to get the broccoli softer and get all the sweetness out of the onion.

04. I place the cooked onion and broccoli in a bowl and set aside for later on. I lightly break the eggs and add them to the pan. Now you could season the eggs if you'd like at this point. I'm only adding some ground pepper to taste but you could also add some salt if you are sharing the omelette with babies and kids over 12 months.

05. I put the broccoli and onion on top of the eggs and sprinkle with the grated cheese. I'm using white cheddar cheese, but you could also use gouda or swiss or any melting cheese of your choice. Then, I cover the pan with the lid and leave it to cook for 3–4 minutes.

06. Now it's time to cook the eggs on the other side. You could use a plate and turn the omelette over, or just use the pan handle to flip it over if you have mastered that skill. I leave it to cook uncovered for 2-3 more minutes, and now the omelette is ready to be served.

📖 Substitutions & Variations

  • Instead of olive oil, you could use butter.
  • You could add more spices to your liking or dried herbs like oregano or Italian seasoning.
  • Instead of half an onion, you could use 2-3 green onions, cut into slices.

🍽 Serving suggestions

We love having this broccoli omelette for breakfast with some tomatoes and cheese on the side, or just on its own. It's really quick to make and quite filling. You could also serve it for lunch or dinner with some protein or healthy potato wedges.

🧰 Storage

You will get about 3 portions of broccoli omelette with this recipe, or more if you are just serving smaller slices to little kids. If you have any leftovers, then I recommend storing the omelette in the fridge and consume within 1-2 days.

❓ FAQ

Do I need to precook the broccoli for an omelette?

When adding broccoli to an omelette, you don't have to boil or steam it beforehand. Just cut it into smaller bits and cook it in the pan for a couple of minutes before adding the eggs in.

Ingredients
  

  • ½ onion
  • 5-6 broccoli florets

  • ⅓ cup cheese shredded

  • Peel and chop half an onion. Wash the broccoli florets and slice into smaller bits.
  • Add 2 tablespoons of olive oil to a heated pan. Add the chopped onion and broccoli. Cook for 4–5 minutes in medium-low heat.
  • Add the cooked onion and broccoli to a bowl and set aside.
  • In a bowl, add the eggs and lightly beat with a fork or whisk.
  • Add one tablespoon of olive oil to a heated pan over medium heat. Add the eggs and the ground pepper.
  • Add the cooked onion and broccoli on top of the eggs. Add the shredded cheese on top.
  • Cover the pan with a lid and cook for 3–4 minutes. Uncover and flip over the omelette with a plate or using the pan handle.
  • Cook the omelette uncovered for 2-3 more minutes and serve.

Broccoli Omelette

Ingredients

  • ½ onion
  • 5-6 broccoli florets
  • 3 tablespoons olive oil ((or butter))
  • ½ teaspoon ground pepper
