These easy-to-prepare zucchini slices are great for lunch, breakfast or as a snack. Full of goodness and nutrients, serve them with some fruits or yogurt on the side. Enjoy!
Grate the zucchinis. Wrap the shredded zucchini in a tea towel or cheesecloth and squeeze out as much water as possible.
Dice the onion, cut the green onions into slices and chop the fresh parsley.
In a bowl, add the zucchini, onions, Greek yogurt, parsley and eggs. Mix everything well.
Add the baking powder and flour. Incorporate using a spatula.
Add the grated cheese to the batter and mix.
In a glassware or baking tray 9x13'' add ¼ cup of the olive oil and spread around. Add the zucchini batter. Add the remaining ¼ of oil on top and spread it evenly.
Bake in a preheated oven to 350℉ / 180℃ for 50 minutes, or until golden brown.

Notes
You could use cheddar, or mozzarella, or Swiss or feta cheese.
For toddlers and older kids, you could add a teaspoon of salt and some ground black pepper for flavor.
