An easy-to-prepare snack of zucchini slices that you could serve for breakfast, lunch or as a snack. Suitable for babies that follow the BLW method, toddlers and older kids. Enjoy!

Zucchini is one of my favorite veggies as it's so versatile and easy to incorporate into dishes. I love it in casseroles and stews as it adds more goodness and fiber to the dish.

Kids often don't like it because of its bland taste and watery texture when cooked. But this incredibly water-dense texture is what makes the zucchini great to use in savory muffins and cakes.

This recipe for zucchini slices is a popular savory pie dish that we make in Greece, with a few adjustments to make it more child-friendly and less fussy to prepare. The zucchinis are grated and mixed with eggs, flour and a few more ingredients to give it a cake-like texture.

🥘 Ingredients

To make these easy zucchini slices, we are going to use eggs, zucchini, onion, green onions, all-purpose flour, baking powder, olive oil, cheese and Greek yogurt.

You could use any cheese your family enjoys, like cheddar, Swiss cheese or mozzarella. For babies over 12 months and older kids, you could add a little bit of salt.

🔪 Step-by-step Instructions

So get your ingredients ready and let's get started!

01. I begin with the zucchinis, shredding them on the coarse side of a grater or using a food processor with a grating blade.

02. I wrap the shredded zucchini in a tea towel and squeeze out most of the water. This step removes excess moisture, helping the zucchini slice hold together better.

03. Then, I dice the onion, cut the green onions into slices and roughly chop the fresh parsley. Instead of parsley, you could also use fresh mint or a tablespoon of dried herbs.

04. In a bowl, I add the shredded zucchini, chopped onions, parsley, eggs and yogurt. If you are making the zucchini slice for older kids, then you could add a little bit of salt. I mix everything well before adding the dry ingredients.

05. Now, I add the flour and baking powder. I mix with a spatula until the flour is incorporated. The batter should be thick at this point. Finally, I add the shredded cheese and combine it with the rest. You could use mild cheddar cheese or Swiss or mozzarella. Whichever you have in your fridge and your family likes.

06. Before transferring the mixture to the tray, I pour half of the olive oil into the bottom of a 9x13-inch Pyrex tray and spread it evenly. You could also use a similar-sized baking tray. Then, I drizzle the remaining olive oil on top. Now, it's ready to bake until it has a nice golden brown color.

📖 Substitutions & Variations

  • Instead of fresh parsley, you could use fresh mint or a tablespoon of dried herbs.
  • You could add a teaspoon of salt and half a teaspoon of ground black pepper if you are making the zucchini slices for older kids and adults.
  • You could use cheddar, mozzarella, Swiss cheese, feta cheese or a mixture of two cheeses.

🍽 Serving suggestions

These easy-to-make zucchini slices can be served for breakfast with some fruits on the side or as an afternoon snack. They are also great for packing on days out and for the kids' lunchboxes.

For a full meal, I would serve the zucchini slice with some protein on the side, like shredded chicken or yogurt.

🧰 Storage

The recipe makes about 12 zucchini slices. You could store any leftovers in the fridge, in an airtight container, and consume within 4–5 days.

The zucchini slices are also freezable. Place some parchment paper between the slices and store them in a freeze-friendly bag or container for up to 2 months.

❓ FAQ

What if I forgot to squeeze the shredded zucchini?

The flavor will be more or less the same if you forget to squeeze out the water from the shredded zucchini, but the texture will not be the same. The zucchini slices will be much softer and it might be difficult to eat by hand.

What other veggies or spices can I add to the zucchini slice?

For extra goodness and flavor, you could also add half a pepper cut into cubes or slices, or a leek. You could also add some more fresh herbs like fresh mint and dill or a mix of dried herbs.

  • In a glassware or baking tray 9x13'' add ¼ cup of the olive oil and spread around. Add the zucchini batter. Add the remaining ¼ of oil on top and spread it evenly.
  • Bake in a preheated oven to 350℉ / 180℃ for 50 minutes, or until golden brown.

Ingredients

  • 2 zucchini ((2 cups when grated))
  • 1 onion
