Instructions
Add the coconut sugar and butter to a bowl. Mix with a hand or stand mixer for 3–4 minutes.
Add the egg and vanilla extract. Continue mixing until it becomes creamy and thick.
Sift the flour, baking powder, cocoa powder and spices over the batter.
Mix everything with a spatula or the paddle attachment of the stand mixer until it becomes a dough.
Wrap the dough with cling film and chill for 30 minutes.
Place the dough between two sheets of parchment paper. Using a rolling pin, roll into 1cm or 0.5 inch thickness.
Cut into shapes using cookie cutters. Transfer the cookies to a lined baking tray.
Bake in a preheated oven to 350℉ / 180℃ for 15 minutes.

If you are using small cookie cutters, you should decrease the time in the oven as the cookies will bake faster.
