Christmas Chocolate Sugar Cookies (cut-out)

These cut-out chocolate sugar cookies, made with coconut sugar and festive Christmas spices, are a healthier alternative to store-bought options and a fun activity for the whole family to enjoy.

Making cookies and biscuits with the kids is always a fun experience! They enjoy helping in the kitchen—adding ingredients to the bowl, rolling or cutting the dough into various shapes, and eagerly watching by the oven to see the final results.

For these chocolate sugar cookies, I’ve opted for coconut sugar instead of white processed sugar and used a much smaller amount compared to typical sugar cookie recipes. I wanted to create a slightly healthier treat that both the kids and I could enjoy without any guilt.

🥘 Ingredients

To make these kid-friendly cut-out chocolate sugar cookies, we are going to use butter, coconut sugar, an egg, vanilla extract, flour, baking powder, ground cinnamon, ground ginger, ground cloves, ground nutmeg and cocoa powder.

The butter needs to be at room temperature to work better with it. I'm using unsweetened cocoa powder that gives the cookies a chocolate flavor without the extra sugar.

🔪 Step-by-step Instructions

So get your ingredients ready and let's get started!

01. I start by mixing the butter with the coconut sugar for 2–3 minutes with a hand or stand mixer. The butter should be at room temperature to ensure it’s soft and easy to mix.

02. Next, I add the egg and vanilla extract and mix for another 3–4 minutes until the mixture becomes thick and creamy. Since coconut sugar doesn’t dissolve as easily as processed sugar and has a darker color, it’s normal for the batter to appear slightly grainy.

03. In a separate bowl, I combine all the dry ingredients: flour, baking powder, cocoa powder, and spices. After mixing them together, I sift the flour mixture into the wet ingredients.

04. With a spatula or the paddle, if using a stand mixer, I combine all ingredients until a soft, but thick cookie dough forms. It should have a dark brown color from the cocoa powder.

05. I wrap the dough with cling film and let it chill for 20–30 minutes before cutting out the chocolate sugar cookies.

06. To make rolling easier, I place the dough between two sheets of parchment paper. Butter-based doughs can be tricky to handle, and the parchment paper helps prevent them from sticking to the rolling pin.

07. I roll out the dough to about half an inch or 1cm. Then, I place the cookie cutter in a bowl with flour and press on the dough. This little trick makes it easier for the cookie to separate from the rest of the dough.

08. I use my Christmas cookie cutters to shape the cookies and transfer them to a lined baking tray. When I run out of space, I gather the leftover dough, roll it back into a ball, and roll it out again with the rolling pin until all the dough is used.

📖 Substitutions & Variations

  • You could add more or less spices to your liking.
  • If using smaller cookie cutters, the cookies will need less time in the oven so they don't burn.
  • If you don’t mind the extra sugar, you can add some decorations or simply enjoy the cookies as they are.

🍽 Serving suggestions

These spiced chocolate sugar cookies make a perfect snack paired with a cup of milk and some fruit on the side. You can also pack a couple in a snack box or bag to enjoy on the go during a day out.

🧰 Storage

I like to store the chocolate cookies in a cookie tin or an airtight container to preserve their flavor. When stored this way, they can stay fresh for up to 10 days.

What can I use instead of coconut sugar?

If you can't find any coconut sugar at your local store, then you could replace it with maple syrup or honey.

Ingredients
  

  • 13 tablespoons butter (at room temperature) (184gr)
  • ½ cup coconut sugar (70gr)
  • 1 egg
  • 1 teaspoon vanilla extract
  • 280 gr flour (2 cups + 2 tablespoons)
  • 1 teaspoon baking powder
  • 2 tablespoons cocoa powder
  • ½ teaspoon ground ginger
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon ground nutmeg

Instructions
 

  • Add the coconut sugar and butter to a bowl. Mix with a hand or stand mixer for 3–4 minutes.
  • Add the egg and vanilla extract. Continue mixing until it becomes creamy and thick.
  • Sift the flour, baking powder, cocoa powder and spices over the batter.
  • Mix everything with a spatula or the paddle attachment of the stand mixer until it becomes a dough.
  • Wrap the dough with cling film and chill for 30 minutes.
  • Place the dough between two sheets of parchment paper. Using a rolling pin, roll into 1cm or 0.5 inch thickness.
  • Cut into shapes using cookie cutters. Transfer the cookies to a lined baking tray.
  • Bake in a preheated oven to 350℉ / 180℃ for 15 minutes.
