Instructions
Cut the eggplant into slices about 0.5in or 1cm. Place them on a lined baking tray and brush the top with some olive oil.
Bake for 15 minutes in a preheated oven to 350℉ / 180℃ until fork tender.
Place a small pan over medium-low heat. Add 2 tablespoons of olive oil.
Add the crushed tomatoes or passata, chopped garlic cloves and ground pepper.
Add ¼ of water to the pot. Cook the tomato sauce for 5–6 minutes until it thickens.
Place 1–2 tablespoons of tomato sauce on top of each eggplant slice. Sprinkle some oregano on top of the tomato sauce.
Add the grated cheese on top of the tomato sauce.
Add any toppings that need cooking like pepper slices or mushroom slices on top.
Bake for 10 minutes in a preheated oven to 350℉ / 180℃.

Notes
You could use any cheese that you like for pizza like cheddar, mozzarella etc.
For older kids and adults, you could add some salt in the tomato sauce.
