These mini pizzas with an eggplant (aubergine) base are much healthier than regular pizza. There are ready in just 35 minutes and you can get your little one involved and help you with the toppings.
If you are avoiding gluten or you are looking for a healthier, veggie loaded pizza for your little ones, you need to try these mini eggplant pizzas. My 6-year-old is not a big fan of eggplant since she was a baby, but she loved these mini eggplant pizzas!
They are very easy to make and on top of the tomato and cheese, you could add any toppings that the kiddos like. From olives and basil to slices of peppers and mushrooms.

🥘 Ingredients
To make these mini eggplant pizzas we are going to need one globe eggplant (aubergine), olive oil, garlic, crushed tomatoes or passata, oregano, cheese and ground pepper. For toddlers and older kids, you could add some salt when making the tomato sauce.
For the toppings, you could use some fresh basil, spinach, olives, pepper slices or mushrooms. I avoid using processed meat like ham slices or pepperoni since it's not very healthy. If you'd like to add some protein, you could shred some cooked chicken or add a little bit of bolognese if you have any leftovers.

🔪 Step-by-step Instructions
So get your ingredients ready and let's get started!
01. I start with washing the eggplant and cutting it into round slices, about 0.5in or 1cm thickness.
02. I place the eggplant slices on a lined baking tray and brush them with a little bit of olive oil.
03. While the eggplant slices are in the oven, I prepare the tomato sauce. In a small pan, I add about 2 tablespoons of olive oil, chopped garlic, crushed tomatoes or passata and ground pepper and cook the sauce for 5–6 minutes in medium-low heat.
04. I bake the eggplant slices for 10–15 minutes until they are fork tender. We don't want to fully bake them, just get them a bit tender before putting on the sauce, cheese and any toppings on.
05. Now that the tomato sauce is ready and the eggplant slices are slightly cooked, it's time to assemble the mini pizzas. I add one or two spoonfuls of tomato sauce on each eggplant slice and spread it. Then I sprinkle some oregano on top of each slice for some extra aroma.
06. I add a handful of grated cheese on top of each eggplant slice. Then you could add any toppings you like, mushroom slices, pepper slices or olives. Whatever your kids like. I bake the mini eggplant pizzas for about 10 minutes, just enough for the cheese to melt without burning.

- For older kids, you could add some salt in the tomato sauce when cooking.
- Instead of oregano, you could use Italian seasoning or dried herbs mix.
- You could use any melting cheese you like for the top.
🍽 Serving suggestions
Babies under 12 months: For little ones that follow the BLW method, I recommend cutting the mini eggplant pizza in half so it's easier to hold with their little hands. You could serve them with some steamed or boiled veggies on the side or some cucumber sticks.
Toddlers & older kids: For toddlers and older kids, I just like to cut the eggplant slice in quarters to resemble pizza slices. You could serve it with some veggies on the side for some extra goodness and fiber, or with some healthy potato fries.

Mini Eggplant Pizzas
Ingredients
- 1 eggplant
- 1 cup crushed tomatoes or passata
- 1-2 garlic cloves (chopped)
- 5 tablespoons olive oil
- ½ teaspoon ground pepper
- 1 teaspoon oregano
- 1 cup grated cheese
Instructions
- Cut the eggplant into slices about 0.5in or 1cm. Place them on a lined baking tray and brush the top with some olive oil.
- Bake for 15 minutes in a preheated oven to 350℉ / 180℃ until fork tender.
- Place a small pan over medium-low heat. Add 2 tablespoons of olive oil.
- Add the crushed tomatoes or passata, chopped garlic cloves and ground pepper.
- Add ¼ of water to the pot. Cook the tomato sauce for 5–6 minutes until it thickens.
- Place 1–2 tablespoons of tomato sauce on top of each eggplant slice. Sprinkle some oregano on top of the tomato sauce.
- Add the grated cheese on top of the tomato sauce.
- Add any toppings that need cooking like pepper slices or mushroom slices on top.
- Bake for 10 minutes in a preheated oven to 350℉ / 180℃.
