My family loves muffins, especially when they come out of the oven and are warm and soft. It's also a great way to get the kids involved in the kitchen, as it's fairly simple to make the batter and I love their proud faces and smiles when they come out of the oven.

🔪 Step-by-step Instructions
So get your ingredients ready and let's get started!
01. First, I like to prepare the fruits and veggies. I’m using one cup of each. That’s one medium apple grated, about one large banana mashed and a medium carrot grated. For a sweeter muffin, make sure the banana is ripe and use an apple variety that is sweet like gala or honeycrisp.
02. I add the butter and banana to a little food processor and mix them for a minute until it’s light and fluffy. Make sure the butter is at room temperature to get a creamy result, otherwise it will be difficult to blend.
03. Now it’s time for the rest of the ingredients. I add first the eggs, milk and vanilla extract to the bowl and mix them with the fruits and butter. Then I incorporate the flour and baking powder using a spatula.
04. I transfer the batter to my silicon muffin cases and bake in a preheated oven for 25-30 minutes. Similar to baking a cake, you could use a stick to check if they are cooked inside. If the stick comes clear, then they are good to come out.

The recipe yields about 8-10 ABC muffins, depending on how big your muffin cases are. I like to store them in an airtight container on the kitchen counter and we usually devour them within 1 or 2 days.
They are also freezable. Just wrap them individually in some kitchen foil or put 2-3 in a freezer bag and store them for 3-4 months.
