🔪 Step-by-step Instructions
So get your ingredients ready and let's get started!
01. I'm peeling and cutting the potato into wedges. I like this shape as they are more chunky and easy to hold for the kids. You could also cut them thinner but you will have to bake them for less time in this case.
02. I add the cut potatoes to a bowl filled with water and let them sit for 15 minutes. This step helps to get some of the potato amylase off and make the wedges crispier.
03. I drain the potato wedges and give them a rinse. The next important step is to get a clean towel and pat dry the potato wedges on all sides. This also helps with the crispiness.
04. I add the potato wedges to a bowl and now it's time to add the spices. I add the sweet paprika, oregano, ground garlic and two tablespoons of olive oil. Using a spoon or just my hands, I mix everything well to coat the potato wedges on all sides.

Easy to clean stainless steel trays. I have a couple of those for roasting veggies or baking cookies.
Buy On Amazon05. I place about half of the potato wedges on a lined baking tray. Then I add some salt to the remaining wedges and place them on a second baking tray for the adults and older kids.
06. Make sure your oven is preheated and try not to overcrowd them. The potato wedges shouldn't be on top of each other to get a nice and crispy result.
📖 Substitutions & Variations
- Instead of oregano, you could use mixed dry herbs or Italian seasoning.
- You could cut the potatoes into wedges, thin fries or with a crinkle cutter.
🍽 Serving suggestions
Babies 6m-12m: For little ones under 12 months that follow the BLW method, you could serve these baked potato wedges with some protein on the side, like my baked meatballs or some chicken, and some more veggies or sticks of cucumber and halved cherry tomatoes. You could also offer them as a little snack with a dip, like hummus, yogurt or my easy homemade ketchup.
Toddlers, older kids & adults: For older kids and adults, you could add some salt before baking or when served. They are a great side dish with pretty much anything, meat or fish, veggie patties or to snack on with a dip or just on their own.
🧰 Storage
The recipe yields about 4 servings of potato wedges for a family of 2 adults and 1 or 2 kids. I must say that they are best enjoyed when freshly baked and hot or within a couple of hours after.
We rarely get any leftovers, but if you do have, store them in the fridge and consume them within 1–2 days.
💭 Tips
- Leave the potatoes in the water for 10-15 minutes to rest before adding the spices and oil.
- Pat-dry the potato wedges with a clean towel before seasoning.
- Use a big tray to give some space between the potato wedges for a crispier result.
❓ FAQ
Yes, you could definitely leave the skin on. Give the potatoes a good wash to remove any dirt and soil. Then cut them into wedges and make sure the skin is on the side when you lie them on the tray to get crispy.
