🥘 Ingredients
To make these blw friendly spinach waffles, we will need some spinach, a banana, eggs, oil, flour, baking powder and cinnamon (optional).
You could use any type of oil you prefer and use most of the time when cooking. I personally love olive oil and use it when making these spinach waffles.

🔪 Step-by-step Instructions
So get your ingredients ready and let's get started!
01. In a food processor, I add the spinach, banana, oil and eggs. I blend everything well until I get a green runny mixture. I use a ripe banana that helps for a natural sweetness but if you don't have an overripe one then just use a regular.
02. Now, in a bowl I mix all the remaining ingredients. The spinach, egg & banana mixture with the flour, baking powder and cinnamon.
03. Using a whisk, I mix everything just enough to combine the ingredients. Don't worry if there are little lumps from the flour left. Try not to overmix the batter as it will affect how fluffy and light the waffles get.
04. We are ready now to start making the spinach waffles. I add about ¼ cup of the batter for each waffle to a preheated waffle maker. I leave it for 2-3 minutes or until golden brown.
📖 Substitutions
- For a gluten-free version, you could substitute the flour with ground oats.
- You could substitute fresh spinach with half a cup frozen spinach.
🍽 Serving suggestions
Babies (6-12 months): These spinach waffles are a great choice for babies that follow the Baby Led Weaning method. For the early stage, you could cut them in strips, so it's easier for them to hold, or offer them as a whole.
These are really versatile! You could serve them plain or with a spread on them but avoid any sugary syrups or honey. They are also great as a savory snack with some cheese on top.
All other ages: For all other ages, children and adults, you could serve them with some maple syrup on top, a poached or fried egg, cheese and tomatoes and so many other ways. Let me know in the comments below what you had them with!
🧰 Storage
If you have any leftovers of these spinach waffles, then I recommend storing them in the fridge as they have eggs in them and it's safer.
You could also store them in the freezer for up to 3 months. Thaw them overnight to consume the next day and you could reheat them in a pan or a toaster.

- Don't overmix the batter as it will affect how fluffy and light the waffles become.
- To store in the freezer, stack one on top of the other with some parchment paper squares between them so they don't stick to each other.

Ingredients
- 1 cup spinach
- 1 banana
- 2 eggs
- ½ cup flour
- 1 teaspoon baking powder
- 1 tablespoon oil
Instructions
- In a blender, add the eggs, banana and spinach. Blend until smooth.
- In a bowl, add the spinach and eggs mixture. Add the flour, baking powder and oil.
- Whisk until it's all combined. Try not to overmix the batter.
- Add ¼ cup of the batter to a heated waffler for each waffle.
- Wait for 2-3 minutes until it's golden brown and continue with the rest of the batter until all done.
Notes
- You can use ½ cup of frozen spinach instead of fresh.
