Easy Puff Pastry Mini Pizzas

You'll only need just 10 minutes to prepare these puff pastry mini pizzas. Ideal for busy days when you need a quick, kid-friendly meal that they'll enjoy with ease.

We all have experienced those hectic days when the house is a mess, work demands pile up, kids have activities to attend, or toddlers are simply being toddlers—and much more! By the end of the day, everyone is hungry, and the kids are craving something quick, tasty, and familiar. And so do you!

You should save the recipe for these quick and easy puff pastry mini pizzas for those days! They are better than store-bought pizzas, since you can control the ingredients and you could make different variations depending on everyone's liking.

I'm using puff pastry for the base to make it quicker and easier to prepare, but I also have an easy pizza dough recipe without yeast that I will be sharing with you in the future. If you are looking for a gluten-free option, then you could try my eggplant mini pizzas which are also delicious and easy to prepare!

🥘 Ingredients

To make these kid-friendly mini pizzas, we are going to use puff pastry, tomato purée or passata, cheese and oregano. Then for toppings, you could use peppers, olives, shredded chicken, basil leaves, arugula or whatever your family likes.

🔪 Step-by-step Instructions

So get your ingredients ready and let's get started!

01. I have my puff pastry thawed according to package instructions. Usually, the package has two small sheets or one big inside. I get 6-8 mini pizzas by cutting the puff pastry sheets into rectangles.

02. I place the puff pastry pieces on a lined baking tray, leaving some space between them to allow for slight expansion in the oven. Using a knife, I score a border about 1-2 cm from the edges of each rectangle, careful not to cut all the way through.

03. The inside rectangle is where we are going to add the pizza ingredients. I start with a tablespoon of tomato purée on each piece. Tomato purée or passata is just blended cooked tomatoes without any salt or sugar. It's perfect for pizza base, pasta sauces and much more.

For some extra flavor, I add some oregano on top. For older kids and adults, you could add a pinch of salt along with the oregano.

04. Next, I add a handful of shredded cheese on top of each mini pizza. You could use whichever cheese you like. Mozzarella is great for babies as it's low in sodium and melts nicely, or you could also use some mild cheddar.

05. Now is the time to add any toppings that require light cooking. I like to add thinly sliced peppers, but you could also include mushroom slices, shredded chicken, or olive slices. I bake the puff pastry mini pizzas for 20-25 minutes until golden brown.

📖 Substitutions & Variations

  • Instead of oregano, you could use Italian seasoning.
  • Instead of tomato puree or passata, you could use homemade ketchup or blend some canned whole tomatoes until smooth.

🍽 Serving suggestions

Babies (6-12 months): For babies under 12 months, I like to cut it into strips so it's easier to hold with their little hands and bite. You could serve it with some fruits on the side, or cucumber sticks and steamed veggies.

All other ages: For older kids and adults, you could serve a slice of mini pizza with some salad or steamed veggies on the side. You can also involve the kids in adding their favorite toppings and pack a slice in their lunchbox for school.

🧰 Storage

This recipe yields about 6-8 mini pizzas. Any leftover slices can be stored in an airtight container in the fridge. To reheat, warm them in the oven for 3–4 minutes. I recommend avoiding the microwave, as it can make the puff pastry too soft and steamy.

❓ FAQ

What tomato sauce can I use for baby-friendly pizza?

For babies under 12 months, make sure the tomato sauce doesn't have any salt or sodium in the ingredients. You could use passata or tomato purée which is 100% tomatoes strained and puréed without any sugar, salt or additives, or make your own homemade tomato sauce.

Ingredients
  

  • 2 puff pastry sheets (1lb / 500gr) thawed
  • 8 tablespoons tomato puree or passata
  • 1 teaspoon oregano
  • 1 cup cheese grated
  • 2 mini sweet peppers (optional)
  • arugula or basil leaves (optional)

Instructions
 

  • Cut each puff pastry sheet into 4–6 rectangles. With a small knife, score a border about 1-2 cm from the edges of each rectangle, careful not to cut all the way through.
  • Add one tablespoon of tomato puree to each pizza slice and spread to cover the inside rectangle.
  • Sprinkle some oregano on top of the tomato.
  • Add a handful of cheese.
  • Place any toppings of your liking like pepper or mushroom slices on top.
  • Bake in a preheated oven to 375℉ / 190℃ for 20–25 minutes.
  • Add any arugula or basil leaves after you take the mini pizzas out of the oven.

  • You could use blended canned whole tomatoes instead of tomato puree or passata.
  • You could use Italian seasoning instead of oregano.
  • For older kids and adults, you could add a pinch of salt with the oregano when seasoning the tomato.
