🥘 Ingredients
To make these blackberry muffins with oatmeal we are going to need rolled oats, milk, all-purpose flour, baking powder, bananas, butter, eggs, vanilla extract, ground cinnamon and blackberries.
I'm using fresh blackberries since it's blackberry season at the moment, but you could also use frozen blackberries.

🔪 Step-by-step Instructions
So get your ingredients ready and let's get started!
01. I'm using about 2 ripe medium-sized bananas that are ¾ of a cup when mashed. Ripe bananas are sweeter and will give us better tasting muffins since we are not adding any extra sugar.
02. In the same bowl with the mashed bananas, I add the eggs and gently whisk to break them down. I add the milk, vanilla extract, melted butter and ground cinnamon and mix everything well. Make sure the butter is not very hot.
03. Now it's time for the dry ingredients. I add the rolled oats, all-purpose flour and baking powder. You could use rolled oats, old-fashioned oats or quick oats, whichever you have at home and use regularly. I gently incorporate the dry ingredients using a spatula.
04. Finally, I give the blackberries a good wash and add them to the bowl with the batter. I'm using about a cup of blackberries. If they are too big, cut them in half and mix in with a spatula.
05. I fill in the muffin cases to the top with the batter. The recipe yields about 12 regular-sized muffins.
06. I place the muffin tin in a preheated oven to 375F and bake for 30 minutes or until the blackberry muffins have a nice golden brown color. When they are ready, I take them out of the oven and place them on a rack to cool down.

You could serve these blackberry oatmeal muffins for breakfast with some scrambled egg for some protein or for snacking. They are also great for packing when going to the park and for lunchboxes.
🧰 Storage
We usually store them in an airtight container on the kitchen counter and devour them within a couple of days. To last longer, you could store them in the fridge and warm them up in the microwave for a few seconds.
❓ FAQ
Steel cut oats are much more dense compared to old-fashioned or quick oats. They require more liquids in the batter, hence the muffins will not be as moist and soft as expected, keeping the rest of the quantities in the recipe as is.
