To make these fluffy apple pancakes, we are going to need all-purpose flour, baking powder, eggs, butter, milk, ground cinnamon and one apple.
- Flour: I’m using all-purpose flour and baking powder as a rising agent.
- Apple: To get that apple flavor, I like to use one semi-sweet apple like Gala, Pink Lady or Honeycrisp.

🔪 Step-by-step Instructions
So get your ingredients ready and let's get started!
01. I start by grating the apple in a big bowl. I like to peel it whilst whole and then grate it until I reach the middle part.
02. Then I add the wet ingredients to the bowl: egg, milk and melted butter. Using a whisk, I mix everything together until well combined.

03. Finally, I add the dry ingredients, the flour, baking powder and cinnamon. I give it a whisk until the flour is incorporated.
04. Once the pan is heated, I add a little oil or butter and place a scoop of batter onto the pan. I usually use about a quarter cup per pancake, but you can make them smaller if you want them to be easier for little ones to hold.

These fluffy apple pancakes are best enjoyed warm. For older kids and adults, you can drizzle a little maple syrup or honey on top, add some chopped nuts, and finish with a dash of cinnamon.
For younger kids and babies, try serving them with yogurt mixed with applesauce, a bit of grated apple, or some berries for a naturally sweet and nutritious pairing.

If you have any leftovers, store them in an airtight container in the fridge and enjoy within 1–2 days. You can reheat them in a pan or microwave for a few seconds until warm.
They also freeze beautifully for up to 2 months. Just let them cool completely, then place a few in a freezer-safe bag with parchment paper between each layer, and pop them in the freezer.
